Ingredient notes:

  • Cottage cheese - 2% plain is the first choice - high protein, moderate fat. Full-fat gives a richer result. Avoid non-fat - the texture is grainy and less satisfying. For a smoother base, blend for 30 seconds before serving - it becomes almost yogurt-like.
  • Peach - Fresh, ripe peaches are the first choice when in season. Frozen sliced peaches (thawed) work equally well year-round. Do not use canned peaches in syrup - added sugar is unnecessary and makes the dish too sweet.
  • Butter - A small amount gives the peaches a slightly caramelized, glossy finish. Coconut oil can substitute.
  • Cinnamon - A full half teaspoon may seem like a lot. It’s not. Cinnamon is doing real flavor work here and also supports blood sugar stability. Don’t reduce it.
  • Vanilla extract - Stir into the cottage cheese, not into the peaches. It elevates the base and pulls the whole bowl together.

Recipe Instructions

  1. Prepare the cottage cheese - Spoon cottage cheese into a bowl. Stir in vanilla extract. Set aside at room temperature while you prepare the peaches - slightly less cold cottage cheese against the warm fruit is better than straight-from-the-fridge cold.
  2. Prep the peaches - Slice the peach into wedges about ½ inch thick. If using frozen peaches, thaw and pat dry gently with a paper towel - excess moisture will prevent proper caramelization.
  3. Start the peaches - Melt butter in a small skillet over medium heat. Add peach slices in a single layer. Cook for 2 minutes without stirring - let them develop some color on the bottom.
  4. Add cinnamon and finish - Sprinkle cinnamon, honey, and sea salt over the peaches. Gently toss once to coat. Cook for 1–2 more minutes until the peaches are tender, glossy, and the juices are beginning to caramelize at the edges. Pull the pan off the heat the moment you see the edges starting to color.
  5. Assemble and eat - Spoon the warm cinnamon peaches and all their pan juices directly over the cold cottage cheese. Add granola on top if using.
