- Ground turkey - 93% lean is the first choice. Browning at high heat with minimal stirring develops flavor. Do not use 99% lean - the filling will be dry and crumbly.
- Water chestnuts - Found canned in the Asian foods aisle. Non-negotiable. They stay crunchy through cooking and provide a textural contrast that nothing else replicates. Chop roughly - not too fine.
- Shiitake mushrooms - Add earthy umami depth and a second texture to the filling. Button mushrooms can substitute. Dice them small so they blend in rather than compete.
- Hoisin sauce - The defining flavor of this dish - sweet, savory, slightly plum-like. Lower-sodium hoisin is available if sodium is a concern.
- Butter lettuce - Also called Boston Bibb. Cup-shaped leaves hold the filling without breaking. Keep leaves in the fridge until the moment of serving - cold, crisp lettuce against warm filling is essential. Iceberg can substitute but is less pliable.
Recipe Instructions
- Make the sauce - In a small bowl, whisk together hoisin sauce, soy sauce, sesame oil, grated ginger, minced garlic, rice vinegar, and sriracha if using. Set aside. Have this ready before you heat the pan.
- Brown the turkey - Heat olive oil in a large skillet or wok over medium-high heat until shimmering. Add ground turkey. Break it apart with a spoon but then leave it alone for 1–2 minutes to let browning develop before stirring again. Cook 5–7 minutes total until no longer pink.
Move Moment - Calf Raises - While the turkey browns: stand hip-width apart, feet flat. Rise slowly onto the balls of your feet, lower slowly. That’s 1. Do 15. Rest 15 seconds. Give the turkey a stir, then repeat 2 more rounds between stirs.
- Add mushrooms - Add diced mushrooms to the pan. Cook for 2 minutes, stirring occasionally, until they soften and release their moisture.
- Sauce and finish - Pour the sauce over the turkey and mushrooms. Stir to coat and cook for 1–2 minutes until the sauce is absorbed and everything is glossy. Add chopped water chestnuts and half the green onions. Toss once and remove from heat.
- Serve - Spoon the warm filling into chilled butter lettuce leaves - 2–3 per serving. Scatter remaining green onions on top. Serve with lime wedges. Set out rice or mini tortillas for the family.

Sauce tip Make the sauce before anything goes in the pan. This recipe moves fast once the heat is on and having it ready prevents the filling from overcooking while you scramble to measure.
On the water chestnuts Add them at the very end after removing from heat, or in the final toss. The longer they cook the more crunch they lose - and the crunch is the point.
