Ingredient notes:

  • Ricotta - Whole milk ricotta has the creamiest texture and is worth using here. Part-skim works but the result is slightly less rich. Drain any excess liquid from the container before portioning.
  • Honey - Raw honey has more depth of flavor than processed honey. Adjust the amount to your preference - start with less and add more at serving if needed.
  • Berries - Add berries just before eating if you're storing these ahead. Berries release juice overnight and can make the ricotta watery by day two. Keep them separate until serving.
  • Lemon zest - Optional but adds a clean brightness that lifts the whole bowl. Use a microplane for the best result.

Recipe Instructions

  1. Portion the ricotta - Spoon approximately 1/2 cup ricotta into each of 4 small jars or bowls.
  2. Add honey - Drizzle honey evenly over each portion. About 3/4 tablespoon per serving.
  3. Top with berries - Add a generous handful of mixed berries. Add lemon zest if using.
  4. Serve now or store - Eat immediately or cover and refrigerate. If storing, add the berries at serving time rather than ahead.

Recipe notes:

On storing with berries Berries release juice as they sit and will make the ricotta watery overnight. If making these ahead, portion and refrigerate the ricotta with honey, and add the berries just before eating.

Part-skim option Part-skim ricotta reduces fat content by about a third. The texture is slightly less creamy but still works well.
