
Lemon Chia Pudding
Chia seeds soaked overnight in almond milk with lemon juice, lemon zest, and honey. The chia seeds absorb the liquid and set into a thick, pudding-like texture by morning. Five minutes of prep the night before, then the jars are ready all week. Note: chia seeds are high in fiber, so this recipe is better suited for when your tolerance has stabilized rather than the earliest days.

Ingredient notes:
- Chia seeds - High in fiber and omega-3 fatty acids. They absorb liquid and expand significantly - the ratio of 3 tablespoons per cup of milk is what creates the right pudding consistency. Less chia gives a thinner result, more gives a denser one.
- Almond milk - Unsweetened is important here since the honey adds the sweetness. Full-fat coconut milk can be substituted for a richer, creamier result. Any plant-based or dairy milk works.
- Lemon juice - Fresh lemon gives this a bright, clean flavor that makes it feel lighter than most pudding formats. Bottled lemon juice is too flat for this recipe.
- On fiber - Two tablespoons of chia seeds contain approximately 8g of fiber. At 1.5 tablespoons per serving, fiber content is approximately 6-7g - on the higher end for early GLP-1 phase. See recipe note.
Recipe Instructions
- Mix - In a bowl or large measuring cup, whisk together almond milk, honey, lemon juice, and lemon zest. Add chia seeds and whisk again to distribute evenly.
- Rest and stir - Let the mixture sit for 10 minutes, then stir again. This second stir is important - chia seeds clump together quickly and need to be redistributed before they fully set.
- Portion - Divide evenly between 4 jars or small containers with lids.
- Refrigerate - Cover and refrigerate overnight, or for at least 4 hours.
- Serve - The pudding should be thick and set. If it's still too thin after 4 hours, refrigerate for another hour. Eat cold, directly from the jar.
Recipe notes:
On fiber Chia seeds are high in fiber - approximately 6-7g per serving in this recipe. This puts it on the higher end for early GLP-1 phase. It's a better fit for when your tolerance has stabilized. If you want to try it earlier, reduce the chia seeds to 4 tablespoons total and check your response.
The second stir matters Chia seeds sink and clump within the first few minutes of soaking. If you don't stir again at the 10-minute mark, you'll end up with a layer of solid chia at the bottom of each jar.
Topping options A small amount of fresh berries or a pinch of lemon zest added at serving works well. Keep toppings simple.
