
One Pan Honey-Dijon Chicken & Roasted Vegetables
One pan. One oven. A glaze that does most of the work. Honey and dijon on chicken at high heat creates that caramelized, slightly sticky exterior that makes it taste like you tried a lot harder than you did. The vegetables roast in the same pan and pick up the drippings. The family’s potatoes cook alongside from the start. Dinner is done when the timer goes off. That’s the whole plan.

- Chicken breasts - Similar-sized pieces cook evenly. If breasts are thick (over 1 inch), pound lightly or butterfly. Pat dry before glazing - moisture prevents the glaze from adhering and caramelizing.
- Dijon mustard - The tang and emulsifying properties make it the right mustard for a glaze - it helps bind the honey and oil and stick to the chicken. Yellow mustard can substitute but the flavor is sharper.
- Honey - Caramelizes at high heat to create the glazed exterior. Any honey works here since it’s being heated.
- Apple cider vinegar - Balances the sweetness of the honey and sharpens the dijon. Lemon juice can substitute.
- Broccoli - Roasts to crispy-edged, nutty perfection at 425°F. If fiber sensitivity is a concern early on, substitute zucchini or green beans on the same timing.
- Baby potatoes - Family add-on. Start 15 minutes ahead so they’re done at the same time as the chicken.
Recipe Instructions
- Preheat - Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
- Make the glaze - In a small bowl, whisk together dijon mustard, honey, minced garlic, 2 tbsp olive oil, apple cider vinegar, dried rosemary, salt, and pepper until smooth. Set aside half for the midpoint brush.
- Prep the potatoes - family add-on - Toss halved baby potatoes with 1 tbsp olive oil and a pinch of salt and pepper. Spread on one side of the baking sheet.
- Start the potatoes - Slide the pan into the oven. Roast potatoes for 15 minutes while you prep the chicken and vegetables.
Move Moment - Body Squats - While the potatoes roast: stand hip-width apart. Lower slowly for a count of 3 - thighs toward parallel. Rise for a count of 3. That’s 1 squat. Do 10. Rest 30 seconds. Repeat 2 more rounds.
- Prep the chicken and vegetables - Pat chicken breasts dry. Brush generously with half the glaze on all sides. Toss broccoli florets, red onion wedges, and bell pepper slices with 1 tbsp olive oil and a pinch of salt and pepper.
- Roast everything - Remove the pan from the oven. Add chicken breasts to the center and scatter the vegetables around them. Return to the oven and roast for 20–25 minutes, brushing the chicken with the remaining glaze at the halfway mark.
Move Moment - Squat Pulses - While everything roasts: lower into a half squat - thighs halfway to parallel. Pulse up and down in small, controlled movements. 15 pulses. Rest 20 seconds. Repeat 2 more rounds.
- Check and rest - Check chicken at 20 minutes - done at 165°F internal temperature. The glaze should be caramelized and slightly sticky. Vegetables should be tender with crispy edges. Let rest 5 minutes.
- Plate and serve - Plate her portion: one chicken breast and a generous scoop of roasted vegetables. Set the pan on the table for the family to serve themselves.
Recipe notes:
On glazing Apply half the glaze before the chicken goes in, then brush with the remaining half at the midpoint. The second application is what creates the caramelized finish. Don’t skip it.
Meal prep Leftover chicken keeps in the fridge for up to 4 days. Slice and use over cauliflower rice or in salads for a quick lunch during the week.
