A bowl of peach and ginger sorbet

Peach & Ginger Sorbet

Frozen peaches blended with fresh ginger, honey, and lemon juice until smooth, then frozen until scoopable. No ice cream maker needed. Ginger contributes natural anti-nausea compounds, which makes this a useful option on difficult days. One session of prep gives you a dessert that stores in the freezer for up to two weeks.

Ingredients

Ingredient notes:

  • Frozen peaches - Frozen peaches work better than fresh for this recipe - they blend into a smoother, more sorbet-like texture. No need to thaw. If using fresh peaches, add a handful of ice to compensate.
  • Fresh ginger - Grate on a microplane for the smoothest result. Fresh ginger provides gingerols, which are the anti-nausea compounds. Ginger powder is a distant substitute and not recommended.
  • Honey - Adds sweetness and helps keep the sorbet from freezing too hard. Adjust to taste depending on the sweetness of your peaches.
  • Equipment - A food processor gives a better result than a standard blender for frozen fruit. If using a blender, add the liquid ingredients first and blend in short pulses, scraping down as needed.

Recipe Instructions

  1. Blend - Add frozen peaches, grated ginger, honey, and lemon juice to a food processor or high-speed blender. Blend until completely smooth, scraping down the sides as needed. The mixture will be very thick.
  2. Taste and adjust - Taste for sweetness and ginger. Add more honey if needed or a little more lemon juice to brighten the flavor.
  3. Serve now or freeze - For a soft-serve consistency, serve immediately. For a firmer scoop, transfer to a sealed container and freeze for 2-3 hours. Stir once at the 1-hour mark to prevent ice crystals.
  4. Store - Keeps in the freezer for up to 2 weeks. If it becomes very firm, let it sit at room temperature for 5 minutes before scooping.

Recipe notes:

On the equipment A food processor handles frozen fruit more easily than a standard blender. If using a blender, add lemon juice and honey first, then the frozen peaches gradually. Stop and scrape down often.

Texture after freezing The sorbet firms up significantly after 2-3 hours in the freezer. If it's too hard to scoop, let it sit at room temperature for a few minutes. It softens quickly.
